This recipe was passed down from the ancient cooks of middle earth until it got to my sister-in-law Shari, who passed it on to us.
I like them, they’re a tasty treat.
Jessica will probably get tired of making them before I’ll get tired of eating them
Actually, they’re so easy I could make them for myself.
The following ingredients are for one pancake.
If you want 5 pancakes you’ll need to repeat this 5 times.
The pancakes are pretty large in diameter, I usually eat 2-3.
- 1 egg
- 1/4 milk (or soy milk [Ed.:I use 8th Continent vanilla soy milk, the extra vanilla is yummy])
- 1 tsp. sugar
- 2 T. flour (or whatever you need to sub.)
- Dash of vanilla
Beat all ingredients in a small bowl.
Melt butter in hot pan, and pour in batter.
Flip when needed.
Serve with butter, cinnamon and sugar, fresh fruit, powdered sugar, jam, or anything yummy!
These are like thick crepes.
I would like to recommend that you try these with almond butter and real maple syrup.
The combination of the two is something like pure, sweet taste bud ecstasy.
